Chicken Fajita Pizza
INGREDIENTS
-1 pound boneless, skinless chicken breast
-1 onion
-1 bell pepper
-2 tsp chili powder
-1 tsp salt
-1/2 tsp garlic powder
-1 12" THIN-CRUST pizza shell (like Boboli)
-1/2 cup salsa
-4 oz reduced-fat cheddar cheese
-no-stick cooking spray

Preparation: Preheat oven to 450
degrees. Cut chicken into bite sized pieces. Cut pepper and onion in thin strips.
In a large non-stick skillet coated with cooking spray, cook chicken, onion and
pepper over medium-high heat until chicken is cooked through and vegetables are
soft. Stir in chili powder, salt and garlic powder. Using a slotted spoon (to drain
excess liquid), spoon fajita mixture over Boboli. Top with salsa and shredded cheese.
Bake directly on oven rack 8 - 10 minutes, until cheese is melted. Serve with a
green salad -OR- fresh fruit. Serves 4.
